Turn leftover couscous into a refreshing salad by adding chopped cucumber, tomatoes and red peppers along with some olive oil.

Goes well with the Superfood Tagine…

(Serves 6)

You will need:

1 fresh lime or half a lemon

half a bunch each of fresh mint and parsley

300ml couscous

300ml boiling water

The pips of half a pomegranate

Method:

 Add the boiling water to the couscous and stir

Grate the lime or lemon rind and stir it into the couscous

Wash and finely chop the parsley and mint leaves

Once the couscous has cooled, add the pomegranate pips, mint and parsley. Enjoy!
